Cold Broccoli Salad - A tasty broccoli salad with raisins and capsicum and topped with cream and tomato sauce dressing. Serve chilled to enjoy it most.
Recipe Ingredients
* Broccoli florets - 4 to 5 cups full
* Tomato (cut into pieces) - 1
* Capsicum (cut into small pieces) - 1
* Onion (chopped) - 1
* Raisins - 1 cup
* Cream - 1/4 cup
* Tomato Sauce - 1/4 cup
* Vinegar / Lemon Juice - 1/2 tbsp
* Soya Sauce - 1/2 tbsp
* Garlic flakes - 6
* Sugar - 1 tsp
* Pepper Powder - 1 tsp
* Salt - 1/2 tsp
* Coriander Leaves (chopped) - 2 tbsp
* Mint Leaves (chopped) - handfull
* Salt to taste
Preparation
First cut broccoli into very small florets with long stalks.
Take a large pan and boil 2 cups of water in it. Add 1/2 tsp sugar and 3/4 tsp salt in it. Then add broccoli florets to the boiling water. Bring to a boil again. Drain immediately and rinse in cold water to prevent further cooking.
In a mixer put cream,tomato sauce,lemon juice, soya sauce, garlic, 1/2 tsp sugar, 1/2 tsp salt, pepper, corinader and mint leaves. Churn well for 2 minutes. This will make the salad dressing and keep it aside in the mixer itself.
In a bowl, mix broccoli, raisins, tomato, capsicum and onion. Pour the prepared dressing in the broccoli vegetable bowl and mix well. Check salt and pepper.
Transfer to a serving bowl and chill it in fridge till serving time.
Before serving garnish with fresh coriander or mint springs.
