Easy Vegetable Broth - Make this easy vegetable soup with cottage cheese, mushrooms, vermicelli and vegetable stock.
Recipe Ingredients
* Mushrooms (sliced) - 1/2 cups
* Paneer (Cottage Cheese shredded) - 200g
* Butter - 1 tsp
* Rice Noodles - 1/2 cup
* Vegetable Stock - 5 cups
* Soya Sauce - 2 tbsp
* Spring Onions (finely chopped) - 2
* Ginger (finely chopped) - 1 tsp
* Coriander (chopped) - 1 tbsp
Vegetable Stock Ingredients and Preparation
* Peppercorns - 6
* Onions (quartered) - 1/2 cup
* Carrots (chopped) - 2 cups
* Whole Lemon Grass Stalks (washed) - 2
* Water - 2 Litres
* Salt to taste
Take a medium size pot and simmer all the ingredients till they release their flavours. This should take about 10 to 15 minutes.
Strain and keep aside.
Main Broth Preparation
Comibine all the ingredients except butter and coriander in a pot and bring to a boil. Simmer for 5 minutes.
Serve hot garnished with butter and coriander.
