Egg Salad Sandwich - First make crunchy egg salad with mushrooms, onions, tomatoes and parsley sprigs and then make a sandwich by spreading on bread slices.
Recipe Ingredients
* Bread Slices (crusts removed) - 8
* Eggs (hard boiled, shelled & chopped) - 4
* Butter (softened) - 2 tbsp
* Mayonnaise - 2 tbsp
* Worcester sauce - 1 tsp
* Pepper to taste
* Musard Seeds(powdered) to taste
* Onion (chopped finely) - 1 (small)
* Mushrooms (sliced) - 250g
* Tomatoes (chopped) - 2
* Salad Oil - 2 tbsps
* Lemon Juice - 1 tbsp
* Parsley Sprigs to garnish
* Salt to taste
Preparation
Butter the bread slices on one side and set aside.
First prepare a dressing by combining the onion, salad oil, lemon juice and seasoning together and mixing very well. Add to it the remaining ingredients and blend once again.
Divide the salad into four portions. Spread a layer of each portion above the buttered layer of the bread slices and cover with the remaining slices buttered slide down.
Cut into triangles and serve with Mint Chutney.
