Creamy Pumpkin Soup - Pumpkin is normally used to make sabzi but here we are sharing with you a simple and tasty soup made with this cute vegetable.
Recipe Ingredients
* Red Pumpkin (cleaned & diced) - 200g
* Vegetable Stock - 4 cups
* Olive Oil - 20ml
* Onions (chopped) - 2
* Garlic (chopped) - 2 tbsp
* Fresh Peppercorns - 5
* White Wine - 20ml
* Fresh Cream - 20ml
* Ground Pepper - 1/4 tsp
* Celery (chopped) - 2 tbsp
* Bay Leaves - 2
* Fresh Cream - 4 tsp
* Salt to taste
Preparation
Take a heavy bottomed pan and heat oil in it.Once it is hot add onion, celery, garlic and bay leaves and saut? till the onions are light brown in colour.
Add the diced pumpkin and fresh peppercorns, and saut? till the vegetables are soft. Season with salt. Add the white wine and vegetable stock and cook for further 25 minutes tillthe pumpkin is soft and pulpy.
Remove from heat and puree till the soup is of a smooth consistency. Return to the heat, add the frsh cream and pepper powder, and simmer it for a further five minutes. Serve hot, garnished with a dash of olive oil and a swirl of fresh cream.
