Easy and tasty Homemade Tomato Soup made with roasted red peppers and carrots.
Recipe Ingredients
* Tomatoes (blanched and pureed) - 1/2 kg
* Onions (chopped) - 2
* Carrots (chopped) - 2 cups
* Potato peeled & diced(large) - 1
* Garlic Cloves (minced) - 3
* Vegetable Stock - 5 cups
* Roasted Red Peppers (drained & rinsed) - 1 can
* Unsweetened Apple Juice - 1 cup
* Dry White Wine - 1/2 cup
* Olive Oil - 2 tbsp
* Thyme - 1/2 tsp
* Salt - 1 tsp
* Black Pepper - 1 tsp
* Sugar - 1 tbsp
* Salt and Pepper to taste
Preparation
Take a pan and heat olive oil in it over medium-high. Add onions and saut? until softened. Add carrots, potato, bell peppers, garlic, salt, thyme and sugar. Add vegetable stock.
Cook until all vegetables are soft. Add Apple Juice and White Wine. Bring to a boil over high heat, then turn down to medium low and simmer stirring occassionaly, until potatoes are fork-tender. It will take approx. 30 minutes.
Using a hand-held blender, puree the soup until smooth. Alternatively, transfer soup to a blender and puree in batches when cooled. Return to pot and heat until warmed through. Season with salt and pepper.
