Corn Chowder Soup - A simple Soup made with fresh corn kernels and creamed can of corn. You can buy this corn can readily from a shopping store.
Recipe Ingredients
* Fresh Corn Kernels - 1/2 cup
* Can of Creamed Corn - 1
* Vegetable Stock - 1 cup
* Milk - 1/2 cup
* White Onion (peeled) - 1
* Potato (peeled & diced) - 1
* Olive Oil - 1 tsp
* Celery Stalk (diced) - 1
* Chilli Flakes - A Pinch
* Red Pepper (diced) - 1/2
* Pepper - To taste
* Salt to taste
Preparation
Take a pan and cook the onions, potatoes, celery and red pepper. Add in salt, chili flakes and black pepper. Cook for 3 to 5 minutes and bring to a boil. Simmer for 10 minutes until potato is soft.
Add in the creamed corn, milk, fresh corn kernels, salt and pepper. Let it simmer for 5 minutes. Transfer three-quarters of the soup mixture to a blender and puree until thick and smooth.
Return to the soup pot to warm through and serve.
