Broccoli Cheese Soup Enjoy little creamy soup recipe made with broccoli and cheese.
Recipe Ingredients
* Broccoli - 3 heads
* Vegetable Stock - 1.5 Litres
* Potatoes (peeled & thinly slices) - 2
* Egg (beaten) - 1
* Leek (chopped) - 1 * Olive Oil - 6 tbsp
* Onions (thinly sliced) - 3
* Hard Cheese - 150g
* Grated Parmesan or Hard Granular Cheese - 1 tbsp
* Salt and Pepper to taste
Preparation
Remove the hard cheese and wrap in a clean tea towel to soak any excess moisture. Heat 3 tbsp of the olive oil in a large pot. Add potato, onion and leek.
Cover and cook for about 5 minutes until vegetables are soft but not coloured. Add broccoli,cover and cook for another 5 minutes. Add the vegetable stock and cook for about 20 to 30 minutes until the vegetables are soft. Use a hard blender to liquidise your soup, it should be quite thick. Add salt and pepper to taste.
While the soup is cooking mix cheese and egg in a bowl. Before serving the soup, dip in a teaspoon into hot water and scoop out little blobs of the cheese and drop them into the soup. Drizzle with a little olive oil.
