
Today is Tamil Varusha Paruppu or Tamil New Year and tomorrow is Vishu, which is the new year festival celebrated in Kerala. I made sabudana kheer which is one of my favorite dessert. I like the chewy texture of it in the kheer. It is simple and yummy. Here you go…

Ingredients:
Sagu or Sabudana – 1/4 cup (any size)Milk – 4 and 1/2 cups (I used 2% milk)3/4th can of 14 0z Sweetened Condensed milkGhee or clarified butter – 2 tspMixed nuts – 1 tbsp (cashew nut, pistachio, almonds)Method of Preparation:
Heat a tsp of ghee in a pan and fry sagu till it is puffed up. Transfer to a bowl and let it cool.In the same pan, add another tsp of ghee and roast the nuts till it becomes golden brown.Boil 1/2 cup of water and 1/2 cup of milk and sagu together till it is half cooked. Keep it aside.At medium heat, in a pressure cooker add 4 cups of milk and condensed milk. Keep on stirring for sometime.When it is about to boil add the half cooked sagu and pressure cook it for 10 minutes.Remove from heat and let it cool.Transfer it to the serving bowl and garnish with roasted nuts.
