Mint Cilantro Pulao


After a very long time I am posting a recipe today. Mint cilantro puloa is  a simple and comfort food. I am in my last trimester and my mom is her to help me. she made this puloa and it came out really good. It’s very easy to make and tastes really good.

Also I just wanted to update you all that I won’t be posting with any regularity for the next few months since my priorities are going to shift to my soon-to-be here son.

However, Arthi & Nithu will continue to bring some wonderful recipes. So, stay tuned.

Preparation time : 45 minutes
No of servings : 3-4
Spice level : 3-4

Ingredients :

Basmati Rice : 2 cupsMint Leaves : 1 1/2 cupCoriander Leaves : 1 1/2 cupGinger & Garlic Paste : 1 tbspGreen Chilies : 6-7 (according to your spice level)Salt : according to tasteCumin seeds: 2 tspGaram masala : 1 tbspCashews : 10 (roasted)Lime juice : 2 tbspGhee : 1 tbspVegetables : 1 cup (carrot, beans, peas or any)

Method of preparation :

Soak basmati rice for 20 minutes.Heat oil in pan add mint leaves, coriander leaves and green chilies  fry them for few minutes.After that grind it into fine paste by adding 2 tbsp lime juice..Now heat the same pan add ghee and add cumin seeds and ginger garlic paste. Fry them for few minutes till it becomes brown in color and raw smell goes off.Then add salt and vegetables and fry them for 5-8 minutes. And add the roasted cashews followed by mint&cilantro paste and let them cook for 5 -8 minutes.Finally transfer this mixture into pressure cooker or electric rice cooker and add 3 cups of water and basmati rice into it. Cook the rice until it’s done.If you use pressure cooker just cook for only one whistle in medium  heat and remove from heat.Serve it hot with raitha.
